Coconut flour butter cookies

Hello! I’m back with yet another simple and easy cookie recipe from cookie box series. It is coconut flour butter cookies, which is a homemade quick approach to delicious snack. I know there are tons of Coconut butter cookie recipes all over the internet and this is somewhat special one, because it need coconut flour. (I posted on new article about coconut flour and how to make that at home, make sure to read it also.)  This coconut flour butter cookies are very similar to everyone’s favorite “nice biscuit” here in Sri Lanka. If you love them these will be your recipe then, you can have your own nice cookies in home. With few different ingredients you can make these within few minutes. So let’s do this guys.

You can also use unsweetened shredded coconut/ desiccated coconut instead of coconut flour. If you using it, get 30g-40g or so for the recipe below.

For 18 cookies

With the size of cookies: 7.8cm × 5.2cm × 3mm

Ingredients

  • Butter 80g
  • Brown sugar 100g
  • White sugar 30g (for sprinkle on top)
  • Egg 1
  • Coconut flour 60 -80g
  • Cake flour/ All-purpose flour 130g
  • Vanilla extract 1tsp
  • Pinch of salt

Steps to make coconut flour butter cookies

  1. In a bowl combine cake flour, coconut flour and salt, set aside. In here I used 60g of coconut flour, you can add more or less amount as you preferred, and if you do be aware of the consistency.
  2. In another separate bowl beat room temperature butter about 3-5min till it become light in color. Then add brown sugar into that and start mixing it on low speed, then gradually increase the speed. You need to end up with light and fluffy butter sugar mixture. Powdered brown sugar work much easier.
  3. Add the egg and beat well, then add vanilla extract and continue beating. Make sure to scrape down the bowl occasionally to get smooth well combined batter.
  4. Then add flour mixture in one go and mix well using a spatula.
  5. Cover the dough and refrigerate it for at least one hour to get best results. If you in a hurry, you can skip this step and results will be still so good.
  6. Place the dough (chilled) on a working surface and roll it out to have 3mm in thickness. Cut cookies using a cookie cutter or template, like I did in here. I used rectangular template because it’s taste similar to “nice biscuit” and I want to bring sort of its likeness to this cookie. If you using a template let me remind you, it need to be thick and dust with flour every time you cut it.
  7. Back to the cookies, after cutting cookies put them on a covered baking tray with a parchment paper. Then with a folk poke on it leaving some gaps in between them and sprinkle some white sugar on it. That way it look exactly similar to nice biscuits.  
  8. Bake them on preheated oven at 180°C about 18-20min till those turn into golden color. After that take cookies out and let them cool on wire rack

You can store cookies in an airtight container at room temperature for up to 1 week or put them on refrigerator, which will keep cookies up to 2-3weeks.
