Creme Caramel / Caramel Pudding

Creme Caramel is a delicious & creamy dessert that covered in beautiful caramel syrup. Heavenly bite of Creme Caramel melt in your mouth within a instant & let me tell you this is unstoppable, Cuz you will keep eating more & more. Be prepared guys. Today I’m going to make this with the use of condensed milk, water & egg. That’s it, you will want for the recipe. Tricky part is the making of sweet caramel. Go through the article I will show you how to make it without burnt. So let’s get start it.

For about 8 servings
Ingredients for Creme Caramel
  1. Condensed milk 390g
  2. Water
  3. Eggs 4
  4. Vanilla essence 1tsp
  5. Pinch of salt
  6. (Optional)Nutmeg powder 1/4tsp
Note:
  • Amount of water for the recipe is equal to the volume of the condensed milk’s tin. What you want to do is add water to the empty tin & get the leftover condensed milk from tin by mixing it with a spoon, then add to the bowl. Same goes for the large tin also.
  • I used 6 inch wide pudding tin for this. You can also use any other types of trays in different sizes & shapes that can go either with oven or on steam. Roughly there were 850 – 900ml of liquid in contain the Creme Caramel. So be aware to choose a tray according to that.
  • In similar way you can make the caramel pudding with the use of large sized condensed milk. If you going to do so use 4-6 eggs, because that much of eggs will be enough to make the dessert.

 

To make the Caramel

You will need;

  1. Sugar 50g
  2. Water 2 & 1/2tbsp
  3. On low flame put a heavy bottom pan & put the sugar on to it. Add water just enough to cover the sugar on the pan. I used a pan that made out from Cheenachatti. You can also use ceramic pot, stainless steel of pots etc, when you do please skip of using dark colored pots because it will prevent overseeing the color changing of the caramel. Which is the key point of making the caramel.
  4. Mix it until sugar fully dissolved.
  5. Then time to time rotate your pan with the use of pair of gloves. You need to do that frequently while allowing it to rest about 1-2 min on the shove & rotating pan where low flame stays in.
  6. It will bubble up, then will start the color changing. Approximately it will took 11-13min from the beginning.
  7. We need to have dark amber color Don’t wait till it goes to brown in color, because it is the sign of being burnt.
  8. Pour the hot caramel in your pudding tray & quickly rotate the tray to coat it with a caramel layer. It will set up in seconds & tray will be also heated up. So be careful there. If you have a tomb it will easier to handle without burning your hand.
To make the Creme Caramel:
  1. Put the condensed milk in to a bowl & to that add water, eggs, vanilla, salt & spices (you can use 1/3 of nutmeg, 5 cardamom, 3-4 cloves, and 1/4 inch of cinnamon) if you desired. The spices will bring out significant taste as well as it will help to control the blood sugar level of the human body hence this recipe contains high level of sugar.
  2. Beat everything in one go, just to combine all.
  3. Transfer the mixture into caramel coated tray & it is ready to cook.
  4. For cooking you can use either on oven or on steamer.
  • If you are using steaming method to cook; place the pudding tray inside the steamer/ pan after covering with an aluminum foil paper on medium heat about 15 – 20 min.
  • Or if you are using oven to cook the pudding; place the pudding tray over a water bath (put another baking tray & put little water below the half way. Then middle of it put the pudding tray.) For the best practice cover the pudding tray with aluminum foil. But I was out of it & couldn’t find substitute for that, so I just pudding to be on itself in the oven. Bake at 185°C about 35-40min in a preheated oven.
  1. Do the toothpick test in whatever method you used to cook. If it comes out clean Creme Caramel is ready. Or let it cook for further few minutes in oven or steamer.
  2. Let the Creme Caramel to cool down. Once it’s done flip over & make it upside down. When doing so remember there is melted caramel inside the tray, don’t loose that gorgeous syrup.
  3. Refrigerate it about 1-2hr, so that caramel pudding will be even more delicious absorbing the caramel. Garnish the Creme Caramel with the syrup & serve.

 

You can enjoy this with a sliced of fresh fruits like cherries, raspberry, etc. Creme Caramel is just fantastic treat for everyone to serve. There are many versions of Flan to make, I will post those articles in near future. So stay alert if you are a fan of caramel custard like me.
