Easy Comfort Food; Turkey Version of Pizza “The Turkish Pide”

Hello my dear friends, today I’m back with yet another easy recipe which is Turkey Pizza | Turkish Pide. It is known as Turkish version of pizza & as per Turkish legend says Italian Pizza was created after the imperial food; the Turkish Pide. It is not much similar to Italian pizza but somehow it is related to pizza, guys you have to figure that out after making the recipe. Turkish Pide is known to be one of the most popular snacks in Turkey. Pide can also be made in various toppings; some favorite toppings are ground meat & onion, Turkish kasar (cheddar) cheese & spinach, cheese and pastrami (Turkish dried beef), cheese and Turkish spicy sausage (sucuk). Sometimes an egg or two can be cracked over Pide towards the end of baking too. Making Pide is actually much easier than you think, it’s beautiful with its iconic oval shape.

They differ in shape to a pizza, in that they are generally long and thin; the toppings are then placed and the edges of the bread are folded inwards and pinched at the top and bottom to create a boat-like shape. This flatbread recipe can be also replace with pizza dough also, but you have to try this recipe at least once, it is so delicious.

For 4 servings
Ingredients for the Dough of Turkey Pizza | Turkish Pide
  1. All-purpose flour 300 gr + 2 tbsp.
  2. Dried yeast 1tsp
  3. Sugar 1tsp
  4. Lukewarm milk 1/2cup
  5. Olive oil/ vegetable oil 1/4tsp
  6. Small egg 1
  7. Water 2-3tbsp
  8. Salt 1tsp

 

 Ingredients for the Topping of Turkey Pizza | Turkish Pide
  1. Boiled & chopped Tuna 250g
  2. Finely chopped 1 medium onion
  3. Diced 1 Capsicum or 1/2 green bell pepper
  4. 1tbsp of ginger garlic paste
  5. Mashed potato 200g
  6. Finely chopped Cabbage 1/4cup
  7. Finely chopped Spring onion/ leeks 1/4cup
  8. Finely chopped carrot 1/4cup
  9. Olive oil/ vegetable oil 1 tbsp.
  10. Salt, freshly ground black pepper & chilli flakes to taste

For garnish

  • 1/4 cup of finely chopped coriander / spring onions

For egg wash

  • 1 egg yolk
  • 4tsp of milk

 

Steps to make the Dough of Turkey Pizza | Turkish Pide
  1. In a bowl add dry yeast, sugar & lukewarm milk, give it a mix & let yeast formats for 10 -15 minutes in warm place.
  2. Put oil & egg into yeast mixture on a large bowl, stir well.
  3. Flour goes to that mixture in this step & use your clean hand to combine all together.
  4. Once it combines, add salt & water. Be careful when you adding the water to the dough, use in little portions like 1 tbsp at a time or otherwise it will be sticky.
  5. We want to have a nice playable dough in here. Knead for about 2 – 3 minutes in the bowl or on your working top.
  6. Form a nice ball & rest for 45minutes in a warm place after greasing oil on the bowl. Cover it & let it become double in size.
Steps to make the topping of Turkey Pizza | Turkish Pide
  1. I used a fish & vegetable topping for this & you can have whatever topping as per your liking. Choose your meat, seafood, cheese & vegetables as saucy spicy combo. Same as the pizza toppings you can play in many different ways, this is the way I did it, so get a basic idea & be creative in your own.
  2. Over medium low flame put a pan & add oil, when it heats add the onions, curry leaves.
  3. Wait till onion cook under half way through & add ginger garlic paste.
  4. At the time where ginger garlic aroma filling in the air you can add all the vegetables & boiled tuna with spices.
  5. Sauté it about 1-2 minutes, don’t let it cook all the way through because it will again cooked in the oven also. Soften the vegies is enough & we want to have beautiful vegetable colors in here to have pretty Turkey Pizza | Turkish Pide.
  6. Topping need to be cool down when we adding it on the Pide.
  7. Prepare the egg wash: beat egg yolk with milk using a folk & set aside.

Contrasting color combination in topping of the Pide will highly stand out also in the flavor wise too. Try to add more colorful vegies if you wish to have a Turkey Pizza | Turkish Pide like this.    

 

Steps to assemble the Turkey Pizza | Turkish Pide
  1. Once the dough is risen, place the dough on a lightly floured surface. Knead the dough for a minute then divide the dough into four pieces and roll into two balls.
  2. On a lightly floured surface, roll the dough balls into 2 oval shapes to reach your desired size with ½ cm (0.2”) thickness.
  3. Lift the flatten dough carefully & put a baking sheet underneath it.
  4. Spread the filling evenly over these flat breads, leaving some space at the edges as a border with no filling
  5. Fold in the sides to act as border to keep the filling intact. Squeeze the oval dough at each end to make it pointy.
  6. Gently press the dough so that it won’t be open when bakes. Lift the baking sheet & place them onto the baking tray.
  7. Brush the edges of dough with egg wash mixture. If you do have black & white sesame seeds, so that it will be more pretty after Pide bakes.
  8. What I like to do in this steps to add some more fresh vegies on the top of the Pide, you can even add cheese in this step also.
  9. Bake for 20 minutes at preheated oven in 200°C in the lowest rack of your oven. In the middle way through baking you can place it on the first rack in your oven, so that we can have golden brown edges with nicely baked Pide and crispy at the edges.
  10. Cover the Pide once come out from the oven about 10 -15 minutes. Now that it cool down a bit & become soft, cut into slices and serve with any sauce or salad. Or you can even sprinkle with more parsley or coriander on the top of the Pide, squeeze some lemon on it also.
