Light and Creamy Mango Custard Pudding


Hi guys! Today I’m with a dessert recipe, yes! You guess it right, it is based on mango. As I promised I really want to share with all of you, so it is Mango Custard Pudding. It is so rich that custard flavor coming through the mangos, so delicious. Its taste divine when fresh mango used to garnish the top bite trough the load of creaminess. Looking for a recipe to make with the use of mangoes, this is for you. You got the mangos & custard powder, then you should definitely give it a try, so surprise your family. Even if you don’t have custard powder go through the article, you will know how to make custard easily at your home.  

Mangoes are also used to make a lot of desserts in summers such as ice cream, pudding, mousse and whole lot of other foods also! Especially in India it’s one of the most popular desserts since it has a very simple procedure on making. So let get start this mouth-watering dessert recipe, shall we?

For 5 servings
Ingredients for Mango Custard Pudding
  1. Full fat cream milk 2 & 1/2 cup + 1/2 cup
  2. Custard powder 3tbsp
  3. Sugar 5tbsp + 1tbsp
  4. Vanilla 1/2tsp
  5. Pinch of salt
  6. Medium size ripe 4 mangoes

There are few different ways of making the Mango Custard Pudding & today I’m going to share with a recipe that calls for alternating layers of custard & mango pulp. For presenting we need to use clear glass ramekins to indicate the color in between each layers. It’s eye catching super tasty dessert. I used vanilla custard powder in the recipe, you can even use flavored custard powder in this also.    

To get mango pulp you need to use the ripe mangoes. Well in my case I thought mangoes were ripe enough & my family & I really want to make this today to have a taste, so I go for making custard & guess what, even though it’s super yummy at the end; its needed beautiful colors doesn’t stand out well. There wasn’t significant difference in between the layers. Recipe I’m sharing is iconic for its layers, pale yellow to bright & shiny yellow with a shade of orange; hence under ripped mangoes beauty of dessert not in perfect form. Dessert is always about presenting right not only the taste matters, so guys learn from my mistake, don’t used under ripped mangoes in recipe.  

Steps to make the Mango Custard Pudding

Start by making the custard, because it has to cool down.

  1. Take Custard powder in a bowl and add ½ cup of the milk to it. Mix well till no lumps are formed in it. Set aside.
  2. Take the remaining milk and 5tbsp sugar & salt in a sauce pan over medium heat. Bring milk to boil & add in the custard mix. Make sure to stir well in the meantime.
  3. You need to keep cooking till it gets thick. For me it take about 12 minutes.
  4. Remove from the shove and add vanilla in & mix well.
  5. Put the pan over a water bath & stir for few minutes. Transfer custard into a bowl and cover with plastic wrap, make sure the wrap touches the top layer of the custard so a hard skin don’t form on the custard.
  6. Chill this in fridge till cold about 2 hours.
  7. In the meantime peel off the mangoes & cut into cubes. Put them on a blender jar with 1tbsp of sugar on it. Remember to left some mango pieces about 1/4 cup to garnish on the pudding when serving in.
  8. Get cold custard out of the fridge & give it a quick whisk.
  9. Get your dessert serving cups, mango pulp & the custard.
  10. At the bottom of the serving cup add a generous amount of custard layer. At the top of that add thin layer of mango pulp, in here you can even add small fresh mango pieces or cooked mango pieces on sugar syrup or caramelized mango pieces on the mango pulp layer.
  11. Fill through 3/4 way to alternating these two or three batches. You need to finish it off with a custard layer. Also remember to make a thick layer of custard & thin layer of mango pulp than custard does.
  12. Get warm liquidly mango jam by microwaving or double boiling it. Mango cordial also a good substitute for this. By spoon or using a piping bag pour lines over it.
  13. Finish off dessert with fresh mango pieces & refrigerate for 2 to 4 hours and serve. Or you can add fresh mango & mango jam just before you are going to serve too. Do what you feel good in.

I used my homemade mango jam in here, you can go & check how to make it also. To garnish you can even add more fruits that can bring colors on it. Since it’s layer need to be showcase, make sure to pour clean layer in the serving cups. If there is excess put on the glass remember to wipe off with a clean tissue.

Gelatin can be used in here to have nice firmness to the dessert instead of nice thick & creaminess on the dessert that we get in this recipe. Use about 4tsp if you want to use gelatin for the recipe, or use 5tsp of agar agar powder.

Simple vanilla custard recipe  


  1. Whole milk 3 cups
  2. Vanilla essence 1tsp
  3. 3 Egg yolks
  4. White sugar 4tbsp
  5. Corn flour 1tbsp
Steps to make the vanilla custard
  1. Heat the milk and the vanilla in a pan over a medium heat, stirring frequently, until just coming up to boiling. Set aside for 15 minutes to infuse and cool slightly.
  2. Mix together the egg yolks, sugar and corn flour in a heatproof bowl stirring to get a smooth paste.
  3. Slowly pour the hot milk into the paste, stirring constantly until completely combined.
  4. Strain the mixture into a clean saucepan and, stirring constantly, cook gently over a low heat until the custard thickens. Check it comes to the right consistency by; coat the back of the spoon with custard and draw a line through with your finger. If the line holds, the custard is ready.
  5. Let it cool in saucepan while stirring over a water bath. Then transfer to a clean bowl & cover with plastic wrap, make sure the wrap touches the top layer of the custard so a hard skin don’t form on the custard. When you are using it make sure to give it a good whisk.
