Malay Inspired Savory Pancake Bites


Hello friends, today I thought of sharing easy food recipe that can come together within a snap. To me it is perfect cute looking Finger Food Recipe or a light snack which called as Malay Inspired Savory Pancake Bites. In Malaysia these savory snack called as Kuih cara berlauk whom cooked on a hot plate to be griddled & it is in bite-sized kuih topped with curried beef mince, chillies and fried shallots. Popular street food mostly sold in tea time. Today I’m making those savory pancake bites to have as dinner, so I prepared them in regular muffin sized ones.

Star of this recipe is the pancake batter which is very simple to make with essential pantry staples that always have on our hands. Considering its gorgeous looks savory pancake bites are suitable to serve during special occasions or as an appetizer during a fancy party. For about 28 servings (mini muffin sized bites)
Ingredients for the batter of Savory Pancake Bites
  1. All-purpose flour 200g
  2. Egg 2
  3. Thick coconut milk 300ml
  4. Turmeric powder ¾ tsp
  5. Salt 1tsp
  6. White pepper ½ tsp


Things to consider:
  • Use thick coconut milk. If you are using canned coconut milk its fine to use as it is, but if you are using organic coconut milk get 1st & 2nd extract of coconut milk only. Most convenient way to get coconut milk is blending shredded coconut with some water will be good enough. Same as the rosette cookies (Sri Lankan Kokis) recipe.
  • In other recipes they used half quantities of water & coconut milk as the liquidity. If you are concern about cholesterol fact it’s recommended to use like that which means for the recipe get 150ml of water & 150ml of coconut milk.
  • Size of eggs also determine the batter consistency, if you got large eggs it may be too runny which will need more flour in or wise versa for using small eggs. You will know what I’m saying as we go along the recipe so go through the whole article.


Steps for making the batter of Savory Pancake Bites
  1. In a bowl add eggs & beat them with a hand whisk. Into that pour the coconut milk in & mix well.
  2. Combine sifted flour with salt, white pepper & turmeric.
  3. Into the egg mixture add the flour & mix till combines through no lumps, don’t overmix the batter.
  4. Batter need to be thick one that not heavy but lighter. If it’s too runny add some flour or if it’s too thick add some coconut milk in.
  5. For a less messy situation pour the batter into a jar so that it will be easier to adding to molds.


Ingredients of the filling of Savory Pancake Bites
  1. Minced chicken 150g
  2. Chopped onion 1
  3. Chopped boiled carrots ¼ cup
  4. Chopped capsicum 2
  5. Ginger garlic paste 1tbsp
  6. Curry powder 1 tbsp
  7. Salt ½ tsp
  8. Black pepper ½ tsp
  9. Chilli flakes ½ tsp
  10. Vegetable oil 2tbsp

Traditionally they used minced beef for the recipe. Because I’m not fond of beef I’m not use in here, you can use whatever meat filling in here or if you are a vegetarian make your favorite vegie salute in here. Also as I’m always saying filling options are endless & use this way as a basic guideline only and have it your own way.


Steps for making the filling of Savory Pancake Bites
  1. Heat oil in a pan on medium heat and add in onion, ginger garlic paste & finely chopped curry leaves. Cook until the onion is translucent.
  2. Then add chopped boiled carrots with capsicum. Season the mixture with salt, pepper, curry powder, chilli flakes and cook for 1 to 2 minutes.
  3. Now add in minced chicken and mix everything well. Continue to cook until meat is fully cooked.
  4. You can add in chopped red bell pepper & parsley too.
  5. Once chicken is fully cook through give it a final mix and set aside.

Note: This will be easier to make if you do have cooked meat.


Assembling the Savory Pancake Bites
  1. Brush some butter or oil generously on the muffin pan.
  2. Pour the batter evenly on the molds to the ¾ way through.
  3. Spoon in some filling into each batter in the center, followed by some bacon, fried onions & chopped vegetables if you wish to.

4. Bake in a preheated oven at 180 °C for 25 minutes or until fully cooked. Remove from the oven and cool for 5 minutes. You can see the pancakes are releasing their edges of the molds once they baked through.

5. Run a small knife or a spatula around a mold and bottom it to release the pancake easily. That’s why we need to apply generous amount of oil or butter on the pan to unmold it easily.

6. Place on a serving plate. Sprinkle some fresh vegies like red pepper, parsley on top before serving.

7. Enjoy with your favorite sauce.

  • If you do have a Kuih Cara mould, heating it over medium low heat and grease it with a little oil. Once mold is hot, pour in batter until ¾ full. Put a small teaspoon of cooked beef mince into the center. Cover with a lid and cook, about a minute. Then remove lid and garnish with chopped chillies and fried shallots. Cover again and cook for another 30 seconds. Once it cooked, remove Kuih Cara from the mould with a skewer or a knife.
  • Or if you don’t have neither Kuih Cara mould nor muffin pan; you can pour the batter on a flat pan and make them into tiny pancakes cover them to cook. Make sure your heat is at medium flame. When the batter is ¼ set, spoon in the ready-made filling and just wait till it sets again covered. Serve when it fully cooked through.
