Hi guys, as for today I’m back with a Bread Recipe and its called as Potato & Spring Onion Bread. An enchanting food recipe that I made quite often, so I thought this time to share with you guys. Only requires few handy ingredients to concoct the potato & spring onion bread. The bread is a vegan recipe however you can use any other filling that suit for you taste for this recipe.

For the first part we will be making the bread, then next part goes for making the spreadable stuffing, assembling the breads & next part is about cooking.  Now let’s get start with bread making as it consume time for proofing.  

 

For about 8 servings
Ingredients for the dough of the bread
  1. All-purpose flour 3cup
  2. Salt 1 tsp
  3. Luke warm milk 1 ½ cup
  4. Instant yeast 1 tbsp
  5. Sugar ½ tsp

 

Steps to make the dough

As always I’m making the dough by hand, if you do have stand mixture put all the ingredients & process for 5 to 7 minutes to get nice dough.

  1. First we need to active the yeast, to that add yeast & sugar to a bowl. Stir in Luke warm milk & cover about 10 minutes to foam up.
  2. In a large mixing bowl add in sifted flour, make a well in a middle & pour the foamed yeast mixture to that.

 

3. Get all flour all most together & then add the salt in.

4. Firm a nice ball, dough is neither a stiff nor too soft one.

5. Transfer dough ball into a working top, give it a knead for about 8 minutes. Now you will be able feel it will lighter than before.

6. Cover the dough ball with a plastic wrap to proof in doubled size in a warm place. Mine took about 45 minutes, time will be depend on the temperature of your kitchen.

7. After dough get doubles, get it on to a flour dusted working board & cut into 8 parts.

8. Form nice balls of dough portions & again cover them to rest about 10 minutes.

 

Ingredients for the filling
  1. Chopped spring onions ½ cup
  2. Mashed potatoes 100g
  3. (Optional) Canned fish 40g
  4. Salt ½ tsp
  5. Black pepper ½ tsp
  6. Turmeric powder ½ tsp
  7. Chilli powder ½ tsp
  8. Garlic powder ½ tsp

Steps to make the filling

Today I will be using canned fish in here too, if you are a vegan skip that. Or you can even use any other meat that are in spreadable consistency.

  1. Mix mashed potatoes with canned fish.
  2. Into that add the spices all together & combine well.
  3. Don’t add the chopped spring onions to the mixture, set it aside for now. You can even add the leeks for this too.  
Assembling the potato & spring onion bread
  1. When small dough balls rested enough, get one dough ball & roll out with a rolling pin to have about 2mm thickness in.
  2. Unlike the most dough rolling this one need to have an oval shape in particularly which means it need to have long length other than the wide just like the picture indicates.
  3. Put the 1 ½ tbsp of filling on rolled out dough. Spread filling over the top leaving ½ inches from the edge using a back of spoon. To even spreading you can damp the spoon with water & start spreading it; that way it will have nice even layer of stuffing on the dough.
  4. Then get a knife or a pizza cutter & run through several times on it to have pockets. Don’t make one cut to the very edge of top to bottom, that won’t look nice. Make about ½ way through leaving some gaps from both sides.
  5. Sprinkle with some chopped spring onions.
  6. Carefully roll the dough to have one stick. Twist from the both sides to get spiral effect. Swirl the twisted dough together. Lastly secure the end by pinching it to the inside of the swirl.
  7. Prepare rest of breads also like this.

 

Cooking the potato & spring onion bread
  1. Heat a pan over medium flame with 3tbp of oil in it. Once it nice & hot put the prepared bread. Flip it over after 2 to 4 minutes or bottom turns in to golden brown.
  2. Cook other side also till it get golden browned. Overall it will take anywhere between 6 to 8 minutes, but keep an eye on it.

Or

  1. Bake these on a preheated oven at 175 °C about 15 to 20 minutes.
  2. Enjoy while it hot with your favorite dripping sauces.

I personally like to make this Bread Recipe on pan because additional oil to fry them gives such a nice flavor to breads, but baking them is much easier & extra fat not included. So do however you like in your way, I would like to invite you to try in both ways they will be so tasty whatever you preferred in to cook with.
