The American pancakes made from thick batter which consisting eggs, flour, milk, and baking powder. However for today I’m going to make a quick & easy pancake batter and clear effortless way to cook, moreover these pancakes are fluffy & soft as they meant to be.

Key is to have super fluffy & soft pancakes depend on leavening agents that you are using. I’m adopting baking powder, baking soda & buttermilk into the recipe, so that all leavening agents start to interact with them reveling a beautiful pancake when they cooked.

If you love fluffiness food recipes try my other breakfast recipes in here;

Since the recipe is so simple I think these Pancake Recipe will be a your new favorite way to start a day, I mean who does have time in morning guys to go for full meal. If you wait till weekends that you have to have more free time on hands to try pancakes, well no more waiting; try these at your busy weekdays too, it will come together before you know it. Go for the recipe to understand how easy & quick actually it is.

For about 6 pancakes
  1. All-purpose flour 125g
  2. 2 medium size egg whites
  3. 1 egg yolk
  4. Baking powder ½ tsp
  5. Baking soda ¼ tsp
  6. Melted butter 25g
  7. Sugar 30g
  8. Buttermilk 150 ml
  9. Vanilla extract ½ tsp
  10. Pinch of salt
  • Instead of buttermilk you can use regular full fat milk with some acids like lemon juice or vinegar. For 150ml of buttermilk use 150ml milk with ½ tbsp of lemon juice in, mix in well leave for about 10 min.
  • Alternatively, you can replace sour cream with an equal amount of buttermilk too.
  • Additionally you can also use fruit such as apples, strawberries, and blueberries to the batter, along with buttermilk or chocolate chips. The best way to add them is to sprinkle them over the pancakes immediately after you’ve placed them in the pan.

Steps to make pancake batter
  1. Sift the flour, baking powder, baking soda and salt together. Give it a mix & set aside.
  2. In a bowl add egg yolk, butter milk, melted butter & vanilla. Mix them using a whisk.
  3. Put the flour to the wet ingredients, combine them thoroughly without leaving any flour lumps in the batter. (Using a sieve you can directly sift the dry ingredients to the wet ingredients in here, it is lot easier.) Set aside.

4. Whip the egg whites till they reach stiff peaks stage. Start whisking them on low in a clean bowl, once they form air bubbles in gradually add in sugar. That way you can maintain the structure well.

5. Use generous amount of egg white dollops to lighten the flour mixture, combine well.

6. Then add rest of meringue & fold into batter until no meringue pockets streaks on it. Do gentle though, don’t lose too much air.

7. The final batter should need somewhat thickness on it while being fluffy & light.

Cooking the pancakes:

Use a nonstick pan for this, it will works really well to cook the pancakes. For the best result you can cook them in low flame, & it will took around 8 – 10 minutes for making one pancake. Consider trying this way when you have all the time on your hand guys. I’m making them on medium flame it took less than 5 minutes or so.

Tip: for faster cooking you can spread the pancakes on the pan, yes that will ensure the center of pancake well cook through, even it doesn’t hold rich fluffy thickness.

As per today I made it like this too, because who do have more than 30 to 40 minutes to spare in the busy mornings guys, seriously. So I did made that way & that’s why my pancakes looked thin in compare to other luxurious ones, okay guys?

But I thought this Pancake Recipe is great because you can make easily & cook them fairly quick, what do you think I’m really curious to know. You know you can made like during week days, try other way through on weekends, tell me which way is the best.

  1. Preheat the pan so that surface become hot.
  2. For quick method turn the flame to medium or in other way turn flame into low.
  3. Scope out the batter with a ladle or measuring cup, so that all pancakes turn out in same size. Put in the hot pan.
  4. Spread it out with back of spoon if you want to cook faster or let it spread by itself just give the pan a little shake holding onto its handle.
  5. Once pancake bubbles the top while having a little dry spots, flip the pancake over. Check the bottom of the pancake before turning if it not browned let it cook for more minute.
  6. After turning the pancake cook for either 2 minutes on medium flame or 4 minutes on low flame. Cook both sides to have beautiful brown color.

  • Do not walk away if you cooking on medium flame though, if can get brown faster.
  • As you all know 1st pancake is not the prettiest, but it taste great. Having saying so pancake batter will get thicker while cooking the pancakes because of interaction of leavening agents, and pancake will get better & better looking times goes up.
  • Uniform cooking on pancakes especially on its center will determine the taste. If you want to have thick pancakes I recommend you to cook on low flame that will ensure center won’t become raw. Again I’m saying I made thin pancakes on medium flame, so I was able to get nicely cooked pancake quickly.
  • To enrich the taste of pancake you can drop little piece of butter to the pan & then pour the pancake batter. When it cook you will be having a rich dark brown colored pancake with more butter infuse which is so good.

Serving the pancakes:
  1. For one serving stack cooked pancakes on top of each other on a plate. Ideally no more than four pancakes per serving. (4 inch in diameter sized pancakes I’m telling here)
  2. Drizzle with butter and maple syrup over hot pancakes if you go for traditional way.
  3. But serving options are limitless, use any topping you prefer, whether sweet or savory.
  4. Sweet servings of pancakes are fruit jam, honey, whipped cream, peanut butter or nutella along with fresh fruits, today I’m having these with bananas.
  5. Accompany pancakes with fried eggs, bacon, or sausages if you wish to have savory serving.
  6. In any case, pancakes are typically paired with a cup of coffee.

The preparation for the Pancake Recipe which takes no more than a few minutes & incredibly simple, but taste its divine. Hence recipe is call for buttermilk, baking powder & baking soda pancakes becomes much lighter and fluffier than regular pancakes because of the method we used in here.

Enrich the classic recipe by incorporating additional ingredients like blueberries and chocolate.
