Sheet Pan Chicken Bread

Hello guys as promised today I’m with delicious & fresh sheet pan recipe, it is a Sheet Pan Chicken Bread. I guess many of you already familiar with sheet pan chicken recipes because it’s popular one for a party table; but have you ever thought making a chicken bread as it is? Yes today we will make it, there are tons of tasty recipes of chicken bread out there & this one is a special one. To find out its specialty go on the article, I’m pretty sure you will be love this. For about 8 servings (in 12 × 10 inch rectangular pan)
Ingredients for the dough of chicken bread
  1. All-purpose flour 500g (4cups)
  2. Luke Warm milk ¼ cup
  3. Dry yeast 1tsp
  4. Sugar ½ tsp
  5. Vegetable oil 3 ½ tbsp. (1/8 cup)
  6. Warm water 1 cup
  7. Salt ½ tsp
  8. (Opt) Sesame seeds & cilantro to garnish
  9. Egg yolk + 1tbsp of milk to egg wash
  10. Melted butter 1 ½ tbsp to brush
Steps to make the dough of chicken bread
  1. First and for most active the dry yeast with sugar & luke warm water, give it a quick stir & cover it for 10 to 15 min to use.

 

2. In a large bowl add sifted flour make a well in a middle of it & start adding activated yeast, oil & ¾ cup of warm water.

3. Combine all well using a spatula & add the salt in it. While doing so use the rest of the warm water as required, it can be less or more than that. As the below picture indicates once most of all the flour comes together leaving little bit of flour hanging around the corner of the bowl, get them all together applying water on your hand for safety measures otherwise consistency can be ruined if we pour water in one go.

 

4. Knead the dough for good 10 – 15 min to get a smooth perfectly round dough ball. Its fine to dough feel sticky at first cuz as we knead it will gradually come to non-sticky stage.

5. Make a nice ball & place it for 45 min or 1hr to go double in size. Meanwhile you can work on the stuffing as I mentioned in other step.

6. Get the doubled sized dough onto a floured working top & knead for 1 – 2 min. divide the dough into a two, make 2 balls from it. Cover them with a kitchen towel for another 15 min.

7. When the time’s up roll out the ball as your size of the baking pan considering the depth of pan too. Mine was about 12 × 10 inch wide rectangular one, so I roll out more sizable than that. Do adjust the dough size according to the pan that it would fit nicely into the pan. The dough should at least have 3 mm thickness, it not supposed to be a thick.

Note: Do not keep one side attaching to the board while rolling it, you need to often flip its sides & flour the board so that dough will come out easily without sticking to board.

8. Roll both dough as its required sizes to assemble the bread.

Ingredients for the filling of chicken bread
  1. Chopped boneless chicken 200g
  2. Vegetable oil 2 tbsp
  3. Ginger garlic paste 1 tsp
  4. Chopped large onion 1
  5. Chopped tomatoes 2-3
  6. Chopped parsley 2tbsp
  7. Bay leaf 1
  8. Coriander powder 1 tsp
  9. Paprika ½ tsp
  10. Black pepper ¼ tsp
  11. Turmeric ¼ tsp
  12. Salt ½ tsp
Steps to make the filling of chicken bread
  1. Cut boneless chicken into a smaller pieces like ½ inch squares.
  2. Heat oil in a pan over medium flame & add the chicken into it. Cook them for about 5 min till it turn into white in color from red while releasing the water in meat.
  3. Add the pepper, coriander powder, turmeric, bay leaf, paprika & salt. Give it a good stir letting it cook for further 2 – 3 min.
  4. Then add the ginger garlic paste and chopped onions, cover it to cook for 8 minutes.
  5. Finally add in chopped tomatoes & parsley. Let it cook for 1 – 2 minutes & turn off the flame.

Note: As always filling is up to your choice & have it in your way. Use any meat or vegetarian version as your desire.

 
Steps to assemble the Sheet Pan Chicken Bread
  1. After placing the rolled dough onto the baking pan, cut the excess points which overhang to sides like below picture indicates using a sharp knife. Don’t worry those dough pieces not going to waste, I will show a way to make a use of it so make sure to go till the end of the recipe.
  2. Add the stuffing on the dough layer, make sure that filling is evenly distributed in every corner. Add fresh vegetables if you like, I add finely chopped onions, tomatoes & cabbage in here. If you do have cheese you can add that in here too.

 

3. Carefully place the other dough layer on the top of this. Again cut any excess dough hanging around the corners.

4. Gently press the top layer into the other layer from its sides, secure the ends pinching them together.

5. For the prettier presentation I just press in both edges together to inside after twisting it a little just like when we making the pie.

6. Egg wash the surface & sprinkle some sesame seeds & cilantro if you like to have a garnish. I didn’t have sesame seeds in the time I make this, so I sprinkle some chopped peanuts over the bread.

7. Bake in a preheated oven at 190℃ in 35 min until it turn into beautiful golden brown color.

8. Brush melted butter on the bread as soon as it’s out the oven. Serve it warm & enjoy with your favorite sauces & salads.

 
From the leftover dough pieces;
  1. Get them together & give it a knead for about 2 – 3 min. make a ball or a two as your quantity. In here I make two balls.
  2. On a floured board roll out into a round shape with 3 mm in thickness.
  3. Add the filling in one half of its shape. As for the filling I add canned fish curry you can use any filling as you prefer.
  4. Cover filling side with other half of the dough. Pinch the both edges together to secure.
  5. You can either bake this or toast in a skillet over medium heat. Since I’m going to bake these two I did the same as chicken bread boarder to this, if you are going to cook it don’t have to do that.
  6. Cook for 3 – 5 min each side till it golden brown all the sides. Or bake it for 190℃ in 20 min as it goes to golden brown color in a preheated oven.

    • Hi Anne, I didn’t try out the recipe with whole wheat flour, but i guess it can be used in here. If you are gonna try out be aware of the liquid amount, it will be different than the all-purpose flour recipe. also you do need to expect a heavier bread than other. I would like to recommend you mix it with all-purpose flour in half quantities for a lighter texture and better rising.
