Simple and Delicious Mango Pickle


Hi! Welcome back to an easy super tasty recipe, it is Mango Pickle. We can see all over the places mango on sale under cheap price. So I thought why not I share with you this recipe of mango pickle. I really love the flavor combination in sour and sweetness that mangos have and with few spices which we used to make pickle will enhance it more. I always bought mangos from market once I saw them in fresh, we need raw mango which are unripe for this recipe. Too much ripe mangos don’t suit well on this, because mango pickle need to have it’s own tangy flavor to blast in mouth. If you have matured mangos which are turn into orange in color, you can use them to make juice, chutney, sweets or desserts instead of using for mango pickle.

I think most of you will already know this recipe and you had already taste it. But anyway I like to share this with you. I love these flavor bomb too much. Simple, easy and quick, only 5 minutes need to prepare the Mango Pickle. 


  1. Small mangos – 4(about 300g)
  2. Chilli powder 1tsp
  3. Black pepper powder 1/4tsp
  4. Salt 1/2tsp
  5. Sugar 1tsp
  6. Turmeric powder 1/8tsp

The require amount of spices may be differ and feel free to always add more or less according to your taste. You can also use Chilli flakes if you like so and when you using it remember to adjust the spiciness that coming from Chilli powder and black pepper powder.

Steps to make mango pickle:

  1. You can use any kind of mangos in here as unripe ones. You can either peel off them or leave them as it is. I prefer to peel them and if you like to keep the skin on, carefully wash the skin very well. Cut mangos into little pieces.
  2. Take a clean bowl and into that add chopped mangos along with all spices. Mix them well using spoon or give it a good toss covering the bowl with a lid. Mangos should nicely coated with spicy mixture to have pure taste to each and every bite that you take.
  3. Taste it and add more spices if you need.

In India they pour a tempering over the above prepared pickle mixture. It use as a side dish not as a snack. It is also very tasty one. For the tempering you need 4tbsp of oil (coconut oil/ sesame oil/ vegetable oil), 2 tsp of mustard seeds, 1tsp of fenugreek seeds, 1/4tsp of hing powder, 3-4 dried red chilies, 3 cloves of garlic and 6-8 curry leaves. Heat the oil and to that add all ingredients and tempered it for 2-3min. pour hot oil mixture on pickle and mix well. For best use keep it at least overnight (6hr) and taste it. In that way juices from mango mix with all the spices and it is super yummy when serving as a side dish.

I always like to have mango pickle without tempering and it is so good. You need to definitely try this out. Following same method we can make pickles from any other fruits like ambarella (Spondias dulcis), pineapple, apple, guava, starfruit (kamaranga as local name/ Averrhoa carambola), star gooseberry (bilin nelli as local name/ Phyllanthus acidus), tree sorrel (bilin) and Lovi-lovi (lovi as local name/ Flacourtia inermis).
