Sweetened Bun with Date Paste


Hi guys today I’m with another delicious food recipe, called as Sweetened Bun with Date Paste aka Date Cookie recipe. I don’t know why it call as date cookie even though it clearly resembling a bun, more than a cookie. Any way these soft fluffy buns stuffed with sweetened paste in as a flower is so delightfully rich bun. With few easy & simple steps you will end up having this truly glorious treat for you self.

Traditionally this “Cookie recipe” comes with date paste, but with a twist I’m making sweet filling for them. I will be adding both filling instructions to prepare it along with another optional filling ideas. Let’s get begin with cooking now.


For about 16 servings
Ingredients for dough of the bun
  1. All-purpose flour 3 cups
  2. Instant yeast 1 ½ tsp
  3. Vegetable oil 1.2 cup
  4. Milk 1 cup
  5. Sugar 3 tbsp
  6. Egg 1 large
  7. Honey or sugar 1 tbsp
  8. Salt ½ tsp


Steps for making the dough
  1. Active the yeast first; in a small bowl add in yeast & sugar. Pour in milk, mix in & let it set aside for 10 min covering bowl with a lid.
  2. In another bowl add egg, oil and honey. You can also add splash of vanilla in here, if you love to. Whisk them together, then pour the oil in. again give it a good stir by using a folk or hand whisk.
  3. In a large bowl put sifted flour. Make a well in the center. Into that add in yeast mixture & egg mixture.


4. Combine all together by using a spatula, half way through add in salt. Then move on to your clean hand & mix. Form a dough ball.

5. Dough should be soft one, then transfer the dough ball onto a lightly four dusted working top. Knead for about 10 minutes. You will be able to feel it become lighter than before & it has smooth surface when we make a ball from it.

6. Clean the mixing ball, apply some oil on it. Transfer the ball into the ball, again brush some oil on the surface of dough ball too. Cover the bowl & let it get doubled in a warm place, mine took about 45 minutes.


Sweet filling for the bun
  1. Date paste 300g*
  2. walnuts 150g*
  3. Cinnamon powder ½ tsp
  4. Cardamom powder ½ tsp
  5. Hot water 1tbsp



  • Store bought date paste is a high priced ingredient, so make your own date paste at home. You will need;
      • Dates without seeds 2 cups
      • Water 1 cup

Method: First you need soak your dates in hot water for about 2 hour before you make it so that they soften enough to get a smooth result. Use 1 cup of hot water to cover it, if it not enough add more water in. Put the soaked date into a food processor or blender, make a smooth paste from it after processing it for few minutes.  Keep stopping and scraping down the sides to have smooth paste, add more water to get the consistency you want; for this recipe you will need a thicker paste, so don’t use much water in.

  • Addition to walnuts you can use any other nuts for the recipe as per your preference. Make sure to put the nuts on a blender or a food processor to get very fine crumbly pieces from it.


Steps to make the sweet filling

If you are using store bough date paste you will need hot water 1tbsp in here to soften the rock hard date paste. Or if you using above method to make date paste you won’t have to use hot water for that. It’s doesn’t a much deal actually, if it’s too runny add more nuts in or if it’s too thick add hot water in go through the recipe you will understand the consistency I’m talking about.

  1. Into date paste add walnut pieces following the spices.
  2. Combine all together to form very thick paste. Make a small balls from it, those date balls need to be stiff, so keep the consistency as I mentioned earlier on.
  3. Use 1tsp sized date paste to make date balls.
  4. Amount of date balls depends on the date buns that you form in next step. Reach out that & decide how many you will make from this batch, according to it form date balls.


Assembling the date buns

You will need;

    • Doubled size dough
    • Date paste
    • Egg yolk + 2tbsp of milk to egg wash
    • Sesame seeds to sprinkle on top
  1. Get the doubled dough on to working board releasing its air in by punching the dough. Knead for 1 – 2 minutes.
  2. Place on the working top divide into 16 parts.
  • I make the recipe using half quantities. As you can see I made 8 buns so that they all can bake in one go. But for me the size is too large, which is one about to 3 ½ inches in diameter.
  • Go for16 if it’s okay with you, if it too sizeable I’m recommending you to divide dough into 20 portions, so that it will be cute little buns once they baked.
  1. From each small dough portion form nice balls.


4. Take one dough ball, press the middle of ball to get nice round. Place the date ball in the middle & wrap up then pinch to seal.


5. Again press the dough ball turning it over to get round shape.

6. Make a perfect circle & make 4 cuts to look like petals.

7. Same way make all buns like this.

8. Carefully transfer them onto a baking pan. Rest for 30 minutes to proof again by covering them with kitchen towel.

9. Once it done egg wash the buns & sprinkle the top with sesame seeds.

10. Bake in a preheated oven at 180°C for about 20 to 25 minutes till they turn into golden brown on top.



As you can see I didn’t use dates for the filling. Mine made from using crushed cookies, peanuts, cashews, peanut nutella & chopped raisin. I used;

  1. Crushed Butter cookies 100g
  2. Finely chopped peanut 50g
  3. Crushed cashew nut 50g
  4. Peanut nutella 6 – 8 tbsp
  5. Finely chopped raisins 75g



  1. All together add the all ingredients. Mix them well. If it needed add 1tbsp of water in.
  2. Make nice stiff balls as required in.
  3. Hence I made 8 large buns I prepared 8 balls using 1tbsp of portion. Double these ingredients if you making buns from the earlier mentioned quantities.
Filling options
  1. I think red bean paste or Mung bean paste can be also used in here. Even though I still haven’t try that paste, similar to this way in japan they cooking buns in lovely shapes. Comment down if you tried them & share tips & tricks because I’m going to try those red bean paste buns too.
  2. Also you can use a mixture of 2/3 cup of shredded coconut or desiccated coconut, melted butter 2tbsp, powdered sugar 2 tbsp & 2 tbsp of milk. You cannot form balls from this, spooned an amount on to rolled dough & pinch the edges to seal it.
  3. I saw nutella bun recipes which similarly prepare like this, but I haven’t try it. I’m guessing it can melt while resting, I’m curious of that; so tell me about that if you have experience on this.


The date Cookie recipe got a nutty, sweet texture & the bun is so soft, fluffy. Since it simple and palatable I made these once for my sister’s birthday, they all loved the taste. Be it a proper traditional treat to for religious occasions or be it a tea time snack or even as a breakfast snack, you can enjoy these rich and delicious Cookie recipe.
