The Most Amazing Lasagna Recipe with Homemade Lasagna Sheets


Hello dear friends, with today’s recipe ”Lasagna Recipe with Lasagna sheets” I’m going to wrap up sheet pan recipe series. As you all know Italian-style lasagna is all about balancing the flavor of cheese, pasta sheets and sauces & it will make the perfect multi-serving layered dish. I can guarantee that once you try out this recipe, you will stop buying the frozen lasagna from the super market. The meal itself outshine than any other thing, especially because of rich meat sauce and a creamy white sauce. Perfect amount of mozzarella cheese make it to another level I need to say, so there is no need of ricotta cheese for the recipe. Instead of trying baking the lasagna, I’m going to cook this on a skillet & I will also include the baking procedure too. Get ready to be amazed guys, let’s go for this.

Today’s post include detailed instructions of making;

  • Lasagna sheet
  • Meat sauce
  • White sauce
  • Preparing the lasagna


For about 4 servings (10 inch in diameter round pan)

From this on I will include the details on preparing everything as said in earlier, so for now;

Lasagna sheets

There are two different ways of making lasagna sheets that I used in, so I will be sharing both the ways & you can follow whatever recipe as per your liking.  

Ingredients for the lasagna sheets 1:
  1. All-purpose flour 270g (2 ¼ cups) + more for dusting
  2. Olive oil/ vegetable oil 2tbsp
  3. Large eggs 2
  4. Salt ½ tsp
Steps to make the lasagna sheet 1:
  1. Place flour on a mixing bowl. To that add salt & oil, then mix these together using your clean hand or with a spatula.
  2. Make a well in the center and crack in eggs. Gently beat eggs using a fork, incorporating the surrounding flour.
  3. Use your clean hand to get it all together. Make a dough, if it won’t come together add ice water or if it has too smooth/ runny consistency add little bit of flour to get a dough. The dough should be a stiff one not a soft dough, so keep an eye on it when adding the water.
  4. Knead dough with your hands for about 2 – 4 minutes.
  5. Wrap the dough using a cling wrap & rest for 30 minutes on room temperature.
  6. After 30 minutes cut the dough into two portions, get one for use & let the other one to rest again covering it with the cling wrap.
  7. Dust some flour on a working top & on the top of that roll out the dough.
  8. Make sure to dust in flour & turn around the dough to the sides, the roll. Try to have very thin layer of its possible, because the more it get roll out it will be best to use.
  9. Cut squares, rectangular or whatever shapes as per the lasagna sheets. Keep the left over pieces, form a ball again & you can cut sheets just like this.
  10. Again you can roll out lasagna sheets to make it thinner.
  11. Transfer lasagna sheets to a floured kitchen towel and let air-dry about 30 minutes before assembling.
  12. Freeze the lasagna sheets on an air tight container for about 1 to 2 months, place a wax paper on the bottom of the container & put a lasagna sheet, again place a wax paper, then a lasagna sheet; just like this alternative the wax papers & lasagna sheets for later usage.  
  13. When boiling the lasagna sheets, put the sheets on hot water over a medium flame with salt in it. Boil for 1 min & keep them on a kitchen towel.

Note: even though after boiling lasagna sheets feel bit sticky, once it dry out it won’t be like that anymore. Translucent texture can be seen on the sheets after it boils.

Ingredients for the lasagna sheets 2:
  1. All-purpose flour 1 ½ cup
  2. Salt ¾ tsp
  3. Olive oil/ vegetable oil 1tbsp
  4. Water ½ cup
Steps to make the lasagna sheet 2:
  1. In a bowl add flour, salt & oil. Pour water little bit at a time & get a smooth dough by mixing all in.
  2. Divide the dough into 4 portions after forming a nice ball.
  3. Make small balls from each dough portion & let it rest for 20 minutes after coving it with damp kitchen towel.
  4. Sprinkle flour on the working top & get one ball after time is up.
  5. Roll it out thinly using a rolling pin. Turn the flatten dough into sides & add good amount of flour for each turn overs. Hence I’m making lasagna on a skillet I rolled out it to a round shape, you can make it any shape as your liking.
  6. Dry out the rolled lasagna sheets on a baking rack or a paper towel. I kept them under a fan so that it dry out quickly, it took about 40 minutes.
  7. We need to have slightly firm & translucent sheets for the recipe to use.
Meat sauce
Ingredients for the meat sauce:
  1. Olive oil/ vegetable oil 1tbsp
  2. Unsalted butter 1tbsp
  3. Chopped tomatoes 1kg/ tomato puree 400g
  4. Ground beef 500g
  5. Grated or finely chopped garlic cloves 5
  6. Finely chopped carrot 1 (large)
  7. Finely chopped celery stalks 2
  8. Finely chopped large onion 1
  9. Bay leaf 1
  10. Salt ½ tsp
  11. Black pepper ½ tsp
  12. White or red wine ¼ cup
Steps to make the meat sauce:
  1. To a large heavy bottom pan add the oil and butter over medium-low heat. When the butter is melted and bubbly, add the chopped onion, garlic, celery & carrots. Mix well and cook for 2 minutes.
  2. Once the vegetables soften add the ground beef. Season the mixture with salt & black pepper.
  3. Stir it well & cook till meat get browned color. Pour the wine to mixture, combine it well.
  4. Increase the heat level to medium high & cook till liquid on the mixture evaporates.
  5. Add the bay leaf, tomato puree or tomato juice (after cutting tomatoes into small pieces, use a hand blender & het a smooth tomato juice) on to the pot & cook if for 2 minutes on high flame till mixture bubbles up.
  6. Then turn the flame onto the low, cook for 1 hour to form soft bubbles on the sauce mixture.
  7. When done, taste for seasoning and adjust to your taste.
  8. You can freeze the sauce in an air tight container for about 2 to 3 months.

Note: The meat that you are using is totally up to your preference, just make sure to get in minced.

White sauce
Ingredients for the white sauce:
  1. Butter 2tbsp
  2. All-purpose flour 2tbsp
  3. Full fat milk 1 cup
  4. Salt ¼ tsp
  5. Black pepper ¼ tsp


Steps to make the white sauce:
  1. Melt butter in a pan on medium heat & add the flour, give it a good mix & cook for 2 – 3 minutes.
  2. Slowly add milk while whisking and stir until smooth, thick, and bubbly mixture forms up.
  3. Season the sauce with salt and pepper to your taste.
  4. If you like you can add in processed cheese or parmesan cheese just before removing from heat, whisk it well till the cheese melted.
Assembling the lasagna

I used lasagna sheet that mentioned in method 2 in here. Hence sheets dry out well it don’t need to boil like method 1 calls. Then I just trim the sheets as the size of pan to stack on the lasagna.  

Since I didn’t have ground meat at the time I used pasta sauce/ pizza sauce in here. Then I made a filling with precooked meat & some vegetables to get nice flavor from lasagna. Traditional method in detailed I included here, you can follow that or you can do as I did in here. Great thing about this way is if you are a vegetarian you can make a sautéed vegetable filling with sauces to make lasagna.  

You will need;

  1. White sauce 1 cup
  2. Meat sauce 1 cup
  3. Cheese 1 cup (mozzarella + cheddar or processed cheese)
  4. Mozzarella cheese ¼ cup
Skillet lasagna:
  1. Spoon generous amount of meat sauce on the base of your pan (Since the lasagna take a while to cook, use a heavy bottom pan to make this or otherwise it will end up burning)
  2. Cover the sauce with lasagna sheets as it fits for the pan. Layer with meat sauce & white sauce just enough to cover pasta sheets. Spread a layer of cheese & filling if you do have in hand.
  3. Repeat layers alternating sheets & sauces to reach last lasagna sheet in sequence.
  4. On to the last lasagna sheet pour some meat sauce and white sauce, top with the mozzarella cheese.
  5. Over low flame place the skillet & cook it for 20 minutes till it turning to golden color. Cooking on the half way through gently spread around the melted cheese.
  6. Garnish with parsley and let stand for about 15 minutes before slicing and serving after it’s done.


Baked lasagna:
  1. Preheat oven to 180°C.
  2. Assemble the lasagna as mentioned in earlier skillet lasagna.
  3. Cover with foil and bake 45 minutes. Uncover, add more cheese and bake an additional 15 minutes or until browned and bubbly. Broil 2-3 minutes if desired.
  4. Garnish with parsley and let stand for about 15 minutes before slicing and serving after it’s done.
